
Quinoa Salad…
So, I haven’t made a lunch post lately. This is mostly because I’ve been way to busy to make myself a decent lunch in the past while. I’ve been having to rely on Nutella and toast to keep me going. Today I decided it was time to eat properly again and made a giant bowl of Quinoa Salad. Quinoa is pronounced: KEEN- WAAA.
First you make up some Quinoa, this site will show you how to make it and give you all kinds of fun facts on how nutritious this stuff is. If you really don’t like quinoa or can’t find it at the grocery store this recipe works just as well with Cous Cous. And another tip: when rincing quinoa I use a coffee filter.
For this salad you will need to make 1 cup quinoa:1.5 cups water ratio worth.
In a bowl ad:
1 1/2 cups chopped cherry tomatoes
1 1/2 cups chopped up cucumber
2/3 cup of chopped up green olives
1/3 cup of chopped red onion
a heaping 1/2 teaspoon of salt
juice of 1 lemon
table spoon or so of olive oil
mix this altogether, add the quinoa once it has cooled
finally add 1/3 cup of chopped fresh mint and mix. done!
