
Banana Raspberry Pancakes…
I can’t explain in words how much I love pancakes for breakfast. When I was a kid we got them once a year during maple syrup season and as an adult I’ve only in the past year been able to successfully make them without screwing them up. So this year, let me tell you, I have eaten a LOT of pancakes. This recipe I threw together this morning. You can use regular milk instead of soy milk, regular flour instead of spelt. But I liked the way the spelt flour made them a bit dense and chocolate soy milk is just much yummier than regular milk.
The Raspberry Sauce on top is a handful of frozen raspberries placed in the microwave or saucepan until hot. Mix until it’s like jam, throw in a splash of maple syrup and mix. Done. Of course anyone who knows me can tell you the moment I was done taking that picture I went to my cupboard to grab the giant jar of Nutella. That’s just the way I do it. I live for banana pancakes slathered in Nutella.
