The one thing I learnt in Italy was that food does not need to be fancy to be perfect. This salad is the one thing that I make that everyone loves. And it’s so simple. If you use quality ingredients it will turn out perfect every time and it only takes about 15 minutes to make! Hope the dreary January weather isn’t getting everyone down, just 2 months to go til spring….
