
Strawberry Shortcake, Jam & Boozy Berries
As promised here are the recipes from my week of strawberries:
Strawberry Shortcake
In a bowl combine:
1 1/2 cups of all purpose flour
1/2 tsp of salt
1 tbsp of baking powder
1/3 cup of sugar
Grate in 1/2 cup of frozen butter
Lightly knead the butter into the flour mixture.
In a separate bowl combine:
1 large beaten egg
1/4 cup of sour cream
1/4 cup of milk
Slowly add the wet mixture to the dry mixture until it is firm but still a bit sticky, you may need to add more flour.
Place the dough on a well floured surface and roll out until it is about 2cm deep.
Use a drinking glass or round cookie cutter to cut out circles, should make about 8 or 9.
Place on well greased baking pan or use parchment paper about 2 1/2 cm apart .
Combine:
1 beaten egg white
2 tbsp of sugar
Brush this on top of biscuits.
Place in oven for 10-15 minutes, until nice and brown (don’t burn the bottoms like I did).
While the shortcakes are baking take the time to clean and chop up your berries. Cover them in as much sugar as you prefer and mix until you have a bit of syrup on the bottom of your bowl.
Once the shortcakes have cooled a bit, slice them half and pile on whipped cream or crème fraiche then your strawberries!
Strawberry Jam
2 lbs of chopped crushed strawberries
1/2 cup of maple syrup
1/2 cup of sugar
1 tbsp of lemon juice
Place all the ingredients in a pot on medium heat until sugar has dissolved, increase the heat to a rolling boil. Boil for about 10 minutes, stirring often. Transfer to hot sterile jars, leaving 1/4 to 1/2 inch space at the top of the jar, and seal.
Bryenne’s Boozy Berries or Ol’ boy Jam (1 small jar)
In a bowl combine:
1 heaping cup of strawberries
1/4 cup of sugar
Stir and let sit over night approx 10-12 hours.
Put berries in a jar then fill the jar with Bourbon/Whiskey. Close lid. Done.
Let that sit around for another few months, then you’re in business!
