
Cocoa Banana Brownies with Peanut Butter Frosting and Crunchy Caramel
Alright…these brownies have everything! I like a lot of flavour in my food so I just went to town with these guys!
Cocoa Banana Brownies
Adapted from this recipe on Smitten Kitchen
In addition to this recipe add two extra tbsp of butter and 1 mashed banana. Add the banana to wet ingredients.
I used a muffin tray instead of a large pan to bake these so they would be individual portions. Baking temperature and time are about the same as the original recipe. Watch to see that the outer edges are darker before removing from the oven.
Peanut Butter Chocolate Frosting
1/4 cup of peanut butter (I prefer 100% real peanut butter)
1/4 cup of salted butter
2 tbsp of cocoa powder
1/4 cup of icing sugar
Mix well and spread lightly on the brownies while they are still hot.
Crunchy Caramel
This is so simple and not simple at all.
Have 2 tbsp of butter and 1 tsp of salt ready.
In a pot with the temperature set fairly high add a cup or two of sugar.
Let sit until it starts melting around the edges, this won’t take long.
Start moving sugar towards the center of the pot but don’t mix it.
Very quickly the sugar will all melt when it slightly turns brownish add your salt and butter and remove from heat.
Immediately pour into a bowl then drizzle on your cool brownies.
It will harden fast into candy.
Wear long sleeves and do not touch it, it is extremely hot.
This is a tough recipe because caramel will burn very easily and is very messy to work with. I took me a couple tries to get it right.
Last step, sprinkle some fleur de sel on top and enjoy!
