
Pretty much the BEST lunch I’ve ever had. (Meatloaf with Tomato Jam & Colcannon)
I’m sitting here still unable to really move. I ate so much at lunch. It was so incredibly delicious. Me and my friend Dave made a weak attempt at seconds but we could only eat about two bites before we passed out on my couch. There really isn’t a better way to spend a rainy fall afternoon.
Here’s how we did it:
Dave’s Meatloaf:
about 3 lbs of ground beef and pork
2 eggs
1 cup of bread crumbs
minced garlic, about two cloves
1 tbsp of Worcestershire sauce
1/3rd cup of steak sauce
1 tsp of dry or fresh thyme
Mix all the ingredients and form a loaf and place it in a bread pan. Baste the top with steak sauce.
Bake at 400 degrees for about 45 minutes.
Tomato Jam
1 and a half cooking onions roughly chopped
Let simmer in a pot with Olive Oil (2 tbsp) and Maple Syrup (1 tbsp) splash of mango juice if you have it and a touch of hot sauce as well.
add 1 tsp of salt
Add half a peeled and chopped apple and a dash of cinnamon
Once the onions are completely soft add 4 peeled and chopped plum tomatoes
Let sit for a couple minutes then remove from the heat.
Colcannon
5 or 6 red, white or yellow potatoes (mixing is fine) chop and boil in salt water.
Once potatoes are nearly fully cooked add 1 or 2 cups of chopped kale.
When potatoes are fully cooked remove most of the water, leave a tiny bit in the pot.
Add in 1/4 cup of butter, 1 cup of sour cream, 4 green onions chopped well.
Mash until potatoes are completely smooth.
You may want to add more butter, sour cream salt or water to suit your liking.
